#Recipe : Seafood Crepes
4 ounces crab meat, cooked
4 ounces shrimp
4 ounces flounder, cooked and flakes
3 Tablespoons butter
2 cloves garlic, minced
3 green onions, minced
1½ cups mushrooms, thinly sliced
¼ teaspoon salt
¼ teaspoon ground pepper
2½ Tablespoons flour
1 cup clam juice
½ cup white wine
1 cup milk
½ cup heavy cream
1 pinch cayenne
1 Tablespoon Old Bay seasoning
½ cup shredded Swiss cheese
¼ cup grated fresh parmesan

Prepare the Crepes
In a saucepan, melt butter over medium- high heat. Add the green onions and garlic and cook 30 seconds. Add the mushrooms and saute 3 minutes. Reduce the heat to medium and add the flour. Cook 2 minutes. Add the clam juice and white wine in stages using a whisk. Cook at simmer until the sauce starts to thicken. Salt and pepper to taste.
Add the milk and the cream and cook until thickened. Remove from the heat and add the cayenne.
Add ¾ cup of sauce to your seafood, ¼ cup Swiss cheese and ¼ cup fresh grated parmesan. Add the Old Bay seasoning.
Divide in equal portion.
Roll the crepes by placing the filling lengthwise across the center of each crepes and folding the end over the filling. Place the crepes in a baking dish, top with the remaining sauce, and ¼ cup Swiss cheese. Garnish with parsley.
